This Pinot Noir was matured for 18 months in new and old French oak before bottling and no filter or finning has been done so as not to strip the wine of any character.
D & A Pinot Noir 2002 is my second commercial vintage of pinot and I decided to pick this pinot at lighter Baume hence the alcohol being only 12.5%. I picked it earlier so I could achieve a pinot with more complex characters and easier to drink but with the finesse and elegance of a true pinot noir.
A different type of yeast was used, hence giving the pinot more cherry and strawberry tastes and less influence of new oak was also used which has given the fruit a more dominance and lift.
